- 2 cups cooked chicken, shredded
- 1 package gnocchi (16 oz)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (mozzarella or cheddar)
Instructions
- Preheat oven to 375°F (190°C).
- In a large pot, sauté onions, garlic, carrots, and celery until soft.
- Add shredded chicken, chicken broth, and Italian seasoning. Bring to a boil.
- Stir in gnocchi and cook for 2-3 minutes.
- Reduce heat and add heavy cream and spinach. Season with salt and pepper.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
Notes
- Use rotisserie chicken for convenience.
- Feel free to add other vegetables.
- Store leftovers in an airtight container.
