Ingredients

  • 2 cups cooked chicken, shredded
  • 1 package gnocchi (16 oz)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot, sauté onions, garlic, carrots, and celery until soft.
  3. Add shredded chicken, chicken broth, and Italian seasoning. Bring to a boil.
  4. Stir in gnocchi and cook for 2-3 minutes.
  5. Reduce heat and add heavy cream and spinach. Season with salt and pepper.
  6. Transfer the mixture to a baking dish.
  7. Top with shredded cheese.
  8. Bake for 20-25 minutes until cheese is bubbly and golden.
