- 4 large potatoes
- 1 cup shredded cheese
- 1 can of beans (15 oz), drained and rinsed
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes.
- Pierce each potato several times with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes.
- Remove the potatoes from the oven and let them cool slightly.
- Cut a slit in each potato and gently squeeze to open.
- Top each potato with cheese and beans.
- Return to the oven for an additional 5-10 minutes until the cheese melts.
Notes
- Serve with sour cream or chives for extra flavor.
- You can use any type of cheese you prefer.
- Black beans or kidney beans work well.
