Ingredients

  • 4 large potatoes
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes.
  3. Pierce each potato several times with a fork.
  4. Rub the potatoes with olive oil, salt, and pepper.
  5. Place the potatoes directly on the oven rack and bake for about 45-60 minutes.
  6. Remove the potatoes from the oven and let them cool slightly.
  7. Cut a slit in each potato and gently squeeze to open.
  8. Top each potato with cheese and beans.
  9. Return to the oven for an additional 5-10 minutes until the cheese melts.

Notes
