Ingredients

  • 2 cups cooked chicken, shredded

  • 1 cup enchilada sauce
  • 8 tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the chicken, black beans, corn, cumin, chili powder, and salt.
  3. Fill each tortilla with the mixture and roll them up.
  4. Place rolled tortillas in a baking dish.
  5. Pour enchilada sauce over the top.
  6. Sprinkle cheese on top.
  7. Bake for 20 minutes until heated through.
