Beef Stew: 7 Secrets to Heartwarming Comfort Food

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onions and garlic, sauté until soft.
  5. Stir in tomato paste and cook for 1 minute.
  6. Add beef back to the pot along with broth, carrots, potatoes, thyme, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  8. Season with salt and pepper before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • Stew can be made a day ahead for better flavor.
