- 1 whole baby chicken (about 3–4 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 lemon, juiced
- Fresh herbs (thyme, rosemary) for garnish
Instructions
- Preheat your grill to medium-high heat.
- Rinse the baby chicken under cold water and pat dry.
- In a bowl, mix olive oil, salt, pepper, garlic powder, onion powder, paprika, and lemon juice.
- Rub the mixture all over the chicken, including under the skin.
- Place the chicken on the grill, fillet side down.
- Grill for about 15-20 minutes, then flip and grill for another 15-20 minutes.
- Check the internal temperature; it should reach 165°F.
- Remove from grill and let it rest for 10 minutes.
- Garnish with fresh herbs and serve.

- Marinate the chicken for a few hours for extra flavor.
- Use a meat thermometer to ensure proper cooking.
