Better-For-You Instant Pot Orange Chicken & Broccoli Bliss

A healthier version of orange chicken made in the Instant Pot with broccoli.

Ingredients

Scale
  • 1 lb chicken fillet, cubed
  • 1 cup broccoli florets
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste

Instructions

  1. Combine chicken, broccoli, orange juice, soy sauce, honey, garlic, and ginger in the Instant Pot.
  2. Set to cook on high pressure for 10 minutes.
  3. Release pressure and remove the chicken and broccoli.
  4. Mix cornstarch and water, then add to the pot.
  5. Set to sauté until sauce thickens.
  6. Return chicken and broccoli to the pot, stir to coat.
  7. Serve warm.

Notes

  • Adjust honey for sweetness.
  • Use low-sodium soy sauce for a healthier option.
  • Serve with brown rice or quinoa.
