Ingredients

  • 2 cups leftover bubble and squeak
  • 4 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add onions, carrots, and celery. Cook until soft.
  3. Stir in garlic and thyme. Cook for 1 minute.
  4. Add bubble and squeak and stir to combine.
  5. Pour in vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Season with salt and pepper.
  8. Serve hot.
