Ingredients

- 2 cups leftover bubble and squeak
- 4 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add onions, carrots, and celery. Cook until soft.
- Stir in garlic and thyme. Cook for 1 minute.
- Add bubble and squeak and stir to combine.
- Pour in vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.

- Use any leftover vegetables for variation.
- Can be blended for a smoother texture.
- Store leftovers in the refrigerator for up to 3 days.
