Ingredients

- 4 boneless chicken fillets
- 2 tablespoons Cajun seasoning
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup diced tomatoes
- 1 cup chicken broth
- 1 tablespoon olive oil
Instructions
- Coat the chicken fillets with Cajun seasoning.
- Heat olive oil in a pan and brown the chicken on both sides.
- Place the chicken in the crockpot.
- Add bell peppers, onions, and tomatoes on top of the chicken.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken before serving.
