- 1 lb chicken fillet, diced
- 1 cup cashews
- 1 bell pepper, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and onion, sauté until translucent.
- Add chicken, cook until no longer pink.
- Stir in bell pepper and cook for 3 minutes.
- Mix soy sauce, chicken broth, and cornstarch in a bowl.
- Pour sauce over chicken mixture, stir well.
- Add cashews, cook for an additional 2 minutes.
- Season with salt and pepper, serve warm.
