- 2 chicken fillets
- 1 can artichoke hearts, drained
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1/4 cup olives, sliced
- 1 tsp capers
- 1/2 tsp red pepper flakes
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken fillets with salt and pepper.
- Cook chicken in the pan until browned, about 5-7 minutes per side.
- Remove chicken and set aside.
- Add garlic, red pepper flakes, and olives to the pan. Sauté for 2 minutes.
- Add diced tomatoes and capers. Stir to combine.
- Return chicken to the pan. Add artichokes on top.
- Cover and simmer for 15-20 minutes until chicken is cooked through.
- Serve hot.
