Chicken and Carrot Pesto: 5 Reasons You’ll Love This Dish

Ingredients

  • 2 chicken fillets
  • 2 cups of carrots, sliced
  • 1 cup of fresh basil leaves
  • 1/4 cup of pine nuts
  • 1/4 cup of grated Parmesan cheese
  • 2 cloves of garlic
  • 1/2 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken fillets with salt and pepper.
  3. Place chicken in a baking dish.
  4. In a food processor, combine basil, pine nuts, Parmesan, garlic, and olive oil. Blend until smooth.
  5. Mix sliced carrots with pesto sauce.
  6. Spread carrot mixture over the chicken.
  7. Bake for 25-30 minutes or until chicken is cooked through.
  8. Serve hot with extra pesto on the side.

Notes

  • Adjust the consistency of the pesto with more or less olive oil.
  • Substitute walnuts for pine nuts if desired.
  • Use grilled chicken for a smoky flavor.
