Ingredients

- 2 chicken fillets
- 2 cups of carrots, sliced
- 1 cup of fresh basil leaves
- 1/4 cup of pine nuts
- 1/4 cup of grated Parmesan cheese
- 2 cloves of garlic
- 1/2 cup of olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken fillets with salt and pepper.
- Place chicken in a baking dish.
- In a food processor, combine basil, pine nuts, Parmesan, garlic, and olive oil. Blend until smooth.
- Mix sliced carrots with pesto sauce.
- Spread carrot mixture over the chicken.
- Bake for 25-30 minutes or until chicken is cooked through.
- Serve hot with extra pesto on the side.
Notes
- Adjust the consistency of the pesto with more or less olive oil.
- Substitute walnuts for pine nuts if desired.
- Use grilled chicken for a smoky flavor.
