Instructions
- Preheat the grill to medium-high heat.
- Dice the eggplant and toss it with olive oil, salt, and pepper.
- Grill the eggplant for 5-7 minutes until tender.
- In a large bowl, combine mixed greens, grilled chicken, grilled eggplant, cherry tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately.
