Ingredients

- 2 chicken fillets
- 2 cups kale, chopped
- 1 can (14 oz) crushed tomatoes
- 1/4 cup olives, sliced
- 2 cloves garlic, minced
- 1 teaspoon capers
- 1/2 teaspoon red pepper flakes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and red pepper flakes, sauté for 1 minute.
- Add chicken fillets, season with salt and pepper. Cook until browned on both sides.
- Pour in crushed tomatoes, add olives and capers. Stir to combine.
- Cover and simmer for 20 minutes, until chicken is cooked through.
- Add chopped kale and cook for an additional 5 minutes, until wilted.
Notes
- Serve with pasta or crusty bread.
- Adjust spice level by modifying red pepper flakes.
