- 1 cup lentils
- 2 chicken fillets, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Add garlic and cook for 1 minute.
- Add diced chicken and cook until browned.
- Stir in lentils, broth, thyme, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Check lentils for doneness and adjust seasoning if needed.
- Serve hot.

- Use cooked chicken for a quicker option.
- Feel free to add other vegetables.
