Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup orzo pasta
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add chicken broth, cooked chicken, and thyme. Bring to a boil.
  5. Add orzo and reduce heat. Simmer until orzo is tender.
  6. Season with salt and pepper.
  7. Serve hot, garnished with parsley.
