Chicken and Potato Curry: 7 Irresistible Comfort Bites

Ingredients

  • 1 lb chicken, diced
  • 2 large potatoes, cubed

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Add chicken and cook until browned.
  4. Add potatoes and tomatoes. Stir well.
  5. Mix in curry powder and salt.
  6. Pour in coconut milk and bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Serve hot with rice or bread.
