- 4 chicken breasts
- 1.5 pounds red potatoes, halved
- 1 onion, chopped

- 1 cup chicken broth

Instructions
- Place the chicken breasts in the crockpot.
- Add the halved red potatoes and chopped onion.
- Sprinkle minced garlic, thyme, salt, and pepper over the top.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Check that the chicken is cooked through and potatoes are tender before serving.
