  • 1 lb smoked sausage, sliced

  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups okra, sliced
  • 2 tbsp vegetable oil
  • 1/4 cup all-purpose flour
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add flour and stir to make a roux, cooking until golden brown.
  3. Add onions, bell peppers, celery, and garlic; sauté until soft.
  4. Add chicken and sausage; cook until browned.
  5. Stir in chicken broth, okra, and Cajun seasoning.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Season with salt and pepper.
  8. Serve over cooked rice.

Notes

  • Adjust seasoning to taste.
  • For a spicier gumbo, add cayenne pepper.
  • Gumbo can be made a day in advance for better flavor.
