- 1 lb chicken fillet, diced
- 1 lb shrimp, peeled and deveined
- 2 cups long-grain rice
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 2 tsp Cajun seasoning
- 1 tsp thyme
- Salt to taste
- Black pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned.
- Add onion, bell pepper, celery, and garlic; sauté until vegetables are tender.
- Stir in rice and cook for 2 minutes.
- Add diced tomatoes, chicken broth, Cajun seasoning, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes.
- Add shrimp and cook for an additional 5-7 minutes, until shrimp are pink.
- Fluff rice with a fork before serving.

- Adjust seasoning to your taste.
- You can use smoked sausage for added flavor.
- Let it rest for a few minutes before serving.
