Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion, bell pepper, celery, and garlic; sauté until vegetables are tender.
  4. Stir in rice and cook for 2 minutes.
  5. Add diced tomatoes, chicken broth, Cajun seasoning, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Simmer for 20 minutes.
  8. Add shrimp and cook for an additional 5-7 minutes, until shrimp are pink.
  9. Fluff rice with a fork before serving.
