Ingredients

  • 2 chicken fillets
  • 2 cups fresh spinach
  • 1 can diced tomatoes (14 oz)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup black olives, sliced
  • 2 tablespoons capers
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Season chicken fillets with salt and pepper and add to the skillet.
  4. Cook chicken for 5-7 minutes on each side until browned and cooked through.
  5. Remove chicken and set aside. In the same skillet, add diced tomatoes, olives, capers, and red pepper flakes.
  6. Simmer for 10 minutes.
  7. Add spinach and cook until wilted.
  8. Return chicken to the skillet and coat with the sauce.
  9. Garnish with fresh basil before serving.
