Ingredients

- 2 chicken fillets
- 2 cups fresh spinach
- 1 can diced tomatoes (14 oz)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup black olives, sliced
- 2 tablespoons capers
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Season chicken fillets with salt and pepper and add to the skillet.
- Cook chicken for 5-7 minutes on each side until browned and cooked through.
- Remove chicken and set aside. In the same skillet, add diced tomatoes, olives, capers, and red pepper flakes.
- Simmer for 10 minutes.
- Add spinach and cook until wilted.
- Return chicken to the skillet and coat with the sauce.
- Garnish with fresh basil before serving.
Notes
- Serve with pasta or crusty bread.
- Adjust spice level by varying red pepper flakes.
- Store leftovers in an airtight container in the fridge.
