Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups fresh spinach

  • 2 garlic cloves, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until tender.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken and spinach. Cook until spinach wilts.
  5. Season with salt and pepper. Stir well.
  6. Serve hot.
