Ingredients

- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 2 cups fresh spinach
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until tender.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and spinach. Cook until spinach wilts.
- Season with salt and pepper. Stir well.
- Serve hot.

- Use leftover chicken for convenience.
- Adjust seasoning to taste.
