Ingredients

- 4 chicken thighs
- 4 chicken drumsticks
- 1 onion, chopped
- 2 bell peppers, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then brown on all sides.
- Remove chicken and set aside.
- Add onions and bell peppers to the skillet and cook until softened.
- Add garlic and cook for 1 minute.
- Stir in diced tomatoes, chicken broth, oregano, and basil.
- Return chicken to the skillet and bring to a simmer.
- Cover and cook for 30-40 minutes, until chicken is cooked through.

- Serve with pasta or crusty bread.
- Use skinless chicken for a lighter dish.
- Can make ahead and reheat.
