- 4 sandwich rolls

Instructions
- Preheat grill or skillet over medium heat.
- In a bowl, mix olive oil, chili powder, cumin, salt, and pepper.
- Coat chicken fillets with the spice mixture.
- Grill or cook chicken for 6-7 minutes on each side or until cooked through.
- Remove chicken and let it rest for a few minutes, then slice.
- In the same skillet, sauté bell pepper and onion until tender.
- Assemble the sandwich by placing chicken and vegetables in rolls.
- Add optional toppings as desired.
