- 4 chicken thighs
- 1 fennel bulb, sliced
- 1 can artichoke hearts, drained
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, juiced
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Season chicken thighs with salt and pepper.
- Brown the chicken thighs on both sides in the skillet.
- Add sliced fennel and garlic to the skillet.
- Stir in artichoke hearts and lemon juice.
- Transfer the skillet to the oven and bake for 25-30 minutes.
- Serve hot and enjoy.
