- 1 bulb of fennel, sliced
- 1 can of artichoke hearts, drained
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Season chicken thighs with salt and pepper.
- Sear chicken in the skillet until golden brown, about 5 minutes per side.
- Add fennel and garlic, cooking for an additional 2 minutes.
- Add artichokes, chicken broth, and lemon juice.
- Transfer the skillet to the oven.
- Bake for 25-30 minutes until chicken is cooked through.
