Instructions

  2. In a skillet, heat olive oil over medium heat.
  3. Season chicken thighs with salt and pepper.
  4. Sear chicken in the skillet until golden brown, about 5 minutes per side.
  5. Add fennel and garlic, cooking for an additional 2 minutes.
  6. Add artichokes, chicken broth, and lemon juice.
  7. Transfer the skillet to the oven.
  8. Bake for 25-30 minutes until chicken is cooked through.
