- 2 chicken fillets, thinly sliced
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/2 cup chicken broth
- 1 lemon, juiced
- 2 cloves garlic, minced
- 8 oz spaghetti
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook spaghetti according to package instructions.
- In a bowl, mix flour with salt and pepper.
- Beat eggs in a separate bowl.
- Dredge chicken in flour, dip in eggs, then set aside.
- Heat olive oil in a pan over medium heat.
- Cook chicken until golden brown, about 4 minutes per side.
- Add garlic and cook for 1 minute.
- Pour in chicken broth and lemon juice, simmer for 3 minutes.
- Toss cooked spaghetti in the sauce.
- Serve chicken on top of pasta, garnish with parsley and Parmesan.
