- 2 cups cooked rice
- 1 cup chicken fillet, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 green onions, chopped
- 2 eggs, beaten
- Salt and pepper to taste
Instructions
- Preheat the Blackstone griddle over medium heat.
- Add sesame oil and diced chicken. Cook until chicken is browned.
- Push the chicken to one side and add mixed vegetables. Cook until tender.
- Pour beaten eggs on the griddle and scramble until cooked.
- Add cooked rice and soy sauce. Mix everything together.
- Season with salt and pepper. Stir in chopped green onions.
- Cook for a few more minutes until everything is heated through.
Notes
- Use day-old rice for best texture.
- Adjust soy sauce quantity to taste.
- Add more vegetables if desired.
