- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1/2 cup peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- 1 teaspoon garlic, minced
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add garlic and sauté for 1 minute.
- Push garlic to the side and pour in beaten eggs, scrambling until fully cooked.
- Add cooked chicken, peas, and carrots. Stir well.
- Add the cooked rice and soy sauce. Mix everything together.
- Stir in green onions and cook for 2 more minutes.
- Serve hot.
Notes
- Use leftover rice for best results.
- Adjust soy sauce to taste.
