- 2 cups cooked rice
- 1 cup cooked chicken, shredded
- 1/2 cup peas and carrots
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add peas and carrots, and cook for 2-3 minutes.
- Push the vegetables to one side and add beaten eggs, scrambling until cooked.
- Add cooked rice and chicken, and mix everything together.
- Pour soy sauce over the mixture and stir well.
- Season with salt and pepper, and toss in chopped green onions.
- Cook for an additional 2-3 minutes, then serve hot.
Notes
- Use leftover rice for better texture.
- Customize with your favorite vegetables.
- For extra flavor, add garlic or ginger.
