Ingredients

  • 2 lbs chicken fillet
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 3 cups broccoli florets
  • 2 cups brown rice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Coat the chicken fillets with the spice mixture.
  4. Place the chicken on a baking sheet.
  5. Spread broccoli florets around the chicken.
  6. Bake for 25-30 minutes until chicken is cooked through.
  7. While the chicken is baking, cook the brown rice according to package instructions.
  8. Once cooked, let the chicken and broccoli cool.
  9. Slice the chicken and portion it into meal prep containers with broccoli and rice.
  10. Store in the refrigerator for up to 5 days.
