- 3 cups broccoli florets
- 2 cups brown rice
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Coat the chicken fillets with the spice mixture.
- Place the chicken on a baking sheet.
- Spread broccoli florets around the chicken.
- Bake for 25-30 minutes until chicken is cooked through.
- While the chicken is baking, cook the brown rice according to package instructions.
- Once cooked, let the chicken and broccoli cool.
- Slice the chicken and portion it into meal prep containers with broccoli and rice.
- Store in the refrigerator for up to 5 days.
