Instructions
- Preheat your cast iron skillet over medium-high heat.

- Add olive oil to the skillet.
- Place the chicken thighs skin-side down in the skillet.
- Cook for 7-10 minutes until the skin is crispy and golden brown.
- Flip the chicken and cook for another 10-15 minutes until fully cooked.
- Use a meat thermometer to ensure the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before serving.
