Ingredients

  • 1 lb ground chicken
  • 1/2 cup peanut sauce
  • 1 cup shredded carrots
  • 1 red bell pepper, diced
  • 1/4 cup green onions, chopped
  • 1 head of butter lettuce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Heat a skillet over medium heat.
  2. Add ground chicken, garlic, and ginger. Cook until chicken is browned.
  3. Stir in peanut sauce and soy sauce.
  4. Add carrots and bell pepper. Cook for an additional 2-3 minutes.
  5. Remove from heat and stir in green onions.
  6. Serve chicken mixture in lettuce leaves.
