Ingredients

- 2 slices of bread
- 1 grilled chicken fillet
- 2 tablespoons pesto
- 1 slice of mozzarella cheese
- 1 cup of fresh spinach
- 1 tablespoon olive oil
Instructions
- Grill the chicken fillet until fully cooked.
- Spread pesto on one side of each slice of bread.
- Layer the grilled chicken on one slice of bread.
- Add mozzarella cheese and fresh spinach on top of the chicken.
- Top with the second slice of bread, pesto side down.
- Heat olive oil in a skillet over medium heat.
- Cook the sandwich for 3-4 minutes on each side until golden brown.
- Slice and serve warm.
Notes
- You can substitute turkey for chicken.
- Add tomatoes for extra flavor.
- Use whole grain bread for a healthier option.
