- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons capers, rinsed and drained
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, parsley, capers, garlic powder, salt, and pepper.
- Form mixture into meatballs, about 1 inch in diameter.
- Place meatballs on a baking sheet and bake for 20 minutes.
- In a skillet, heat olive oil over medium heat.
- Add lemon juice and chicken broth, bring to a simmer.
- Add baked meatballs to the skillet and cook for 5 minutes.
- Serve with fresh parsley on top.
