Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, parsley, capers, garlic powder, salt, and pepper.
  3. Form mixture into meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet and bake for 20 minutes.
  5. In a skillet, heat olive oil over medium heat.
  6. Add lemon juice and chicken broth, bring to a simmer.
  7. Add baked meatballs to the skillet and cook for 5 minutes.
