Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 4 large tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sauté until soft.
  3. Stir in shredded chicken, cumin, and salt, cook for 3 minutes.
  4. Place a tortilla in the pan, add chicken mixture and cheese on one half.
  5. Fold the tortilla and cook until golden brown, about 2-3 minutes per side.
  6. Repeat with remaining tortillas.
  7. Cut into wedges and serve warm.
