- 2 cups cooked chicken, shredded
- 1 cup shredded cheese
- 1/2 cup bell peppers, diced
- 1/2 cup onions, diced
- 4 large tortillas
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté until soft.
- Stir in shredded chicken, cumin, and salt, cook for 3 minutes.
- Place a tortilla in the pan, add chicken mixture and cheese on one half.
- Fold the tortilla and cook until golden brown, about 2-3 minutes per side.
- Repeat with remaining tortillas.
- Cut into wedges and serve warm.
Notes
- Use any cheese of your choice.
- Add avocado or salsa for extra flavor.
- Store leftovers in the fridge for up to 3 days.
