- 2 cups cooked chicken, diced
- 1 cup apricots, diced
- 1/2 cup celery, chopped
- 1/4 cup red onion, diced
- 1/2 cup Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chicken, apricots, celery, and red onion.
- In a separate bowl, whisk together the Greek yogurt, honey, lemon juice, salt, and pepper.
- Pour the dressing over the chicken mixture and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Serve on a bed of lettuce for a light meal.
