- 2 cups cooked chicken, shredded
- 1 cup cooked beets, diced
- 1/2 cup celery, chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, diced beets, chopped celery, and red onion.
- In a separate bowl, mix the mayonnaise and Dijon mustard.
- Add the mayo mixture to the chicken and vegetable mixture.
- Season with salt and pepper.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
