- 2 cups cooked chicken, shredded
- 1 cup cauliflower florets, chopped
- 1/2 cup Greek yogurt
- 1/4 cup lemon juice
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- Salt to taste
- Black pepper to taste
Instructions
- In a large bowl, combine shredded chicken and cauliflower.
- Add Greek yogurt and lemon juice. Mix well.
- Stir in celery and red onion.
- Season with salt and black pepper.
- Chill in the refrigerator for 30 minutes before serving.

- This salad can be served on lettuce leaves.
