Ingredients

- 2 cups cooked chicken, shredded
- 1 cup fresh figs, halved
- 1/2 cup celery, chopped
- 1/4 cup red onion, diced
- 1/2 cup walnuts, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded chicken, figs, celery, red onion, and walnuts.
- In a separate bowl, mix Greek yogurt, honey, lemon juice, salt, and pepper.
- Pour the yogurt mixture over the chicken mixture and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
- Serve on a bed of greens or in a sandwich.
Notes
- Use leftover chicken for convenience.
- Adjust honey based on the sweetness of figs.
- Can be stored in the fridge for up to 3 days.
