Instructions
- In a large bowl, combine shredded chicken, diced zucchini, mint leaves, and red onion.
- In a separate bowl, mix Greek yogurt, olive oil, salt, and pepper.
- Pour the yogurt mixture over the chicken and vegetables.
- Toss gently to combine.
- Chill in the refrigerator for 30 minutes before serving.
