- 2 cups mixed greens
- 1 cup cooked chicken, sliced
- 1/2 cup bell peppers, sliced
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup carrots, shredded
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
- 1/4 cup water
- Salt and pepper to taste
Instructions
- Grill chicken skewers until cooked through.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, sesame oil, and water to make the dressing.
- In a large bowl, combine mixed greens, bell peppers, cucumber, red onion, and carrots.
- Add sliced chicken on top of the salad.
- Drizzle the peanut dressing over the salad.
- Season with salt and pepper to taste.
- Toss gently and serve immediately.
Notes
- Use grilled tofu for a vegetarian option.
- Adjust dressing thickness with more or less water.
- Can substitute vegetables based on preference.
