- 1 lb chicken fillet, diced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 1 onion, chopped
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp pepper
- Salt to taste
Instructions
- Heat a large pot over medium heat.
- Add diced chicken and cook until browned.
- Add onions and garlic, sauté until soft.
- Add carrots, potatoes, and celery.
- Pour in chicken broth and bring to a boil.
- Add thyme, pepper, and salt.
- Reduce heat and simmer for 30 minutes.
- Stir occasionally and serve hot.
Notes
- Feel free to add other vegetables.
- You can use leftover chicken for quicker prep.
- Store leftovers in the refrigerator for up to 3 days.
