Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- In a bowl, toss sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Place the sweet potatoes on a baking sheet.
- Season chicken fillets with olive oil, garlic powder, paprika, salt, and pepper.
- Place chicken on the baking sheet with sweet potatoes.
- Bake for 25-30 minutes until chicken is cooked through and sweet potatoes are tender.
- Let cool, then portion into meal prep containers.
- Garnish with fresh parsley before serving.
