- 2 cups cooked chicken tikka, shredded
- 4 slices of whole grain bread
- 1/2 cup cucumber, sliced
- 1/2 cup lettuce, shredded
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- In a bowl, mix shredded chicken tikka with mayonnaise and lemon juice.
- Add salt and black pepper to taste.
- Toast the bread slices lightly.
- Spread the chicken mixture on two slices of bread.
- Top with cucumber and lettuce.
- Cover with the remaining bread slices.
- Cut the sandwich in half and serve.
