Ingredients

  • 2 cups cooked chicken, shredded
  • 4 whole wheat tortillas
  • 1 cup lettuce, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix Greek yogurt, olive oil, lemon juice, salt, and pepper.
  2. Add shredded chicken and stir until well coated.
  3. Lay out the whole wheat tortillas.
  4. Divide the chicken mixture among the tortillas.
  5. Add lettuce, cherry tomatoes, and cucumber on top of the chicken.
  6. Roll up each tortilla tightly.
  7. Slice in half and serve immediately.

Notes

  • Use grilled chicken for added flavor.
