- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped cilantro
- 1 egg
- 2 tablespoons chipotle sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, cilantro, egg, chipotle sauce, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- Shape the mixture into meatballs, about 1 inch in diameter.
- Place meatballs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until fully cooked.
- Serve with your favorite sauce.
Notes
- Adjust the spiciness by adding more or less chipotle sauce.
- These meatballs freeze well for future meals.
- Serve with rice or in a tortilla for a complete meal.
