Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 2 pie crusts

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat.
  3. Add onions and cook until soft.
  4. Stir in flour, salt, pepper, garlic powder, and thyme.
  5. Gradually whisk in chicken broth and milk.
  6. Cook until thickened, stirring constantly.
  7. Add chicken, carrots, peas, and potatoes. Mix well.
  8. Place one pie crust in a pie dish.
  9. Pour filling into the crust.
  10. Top with the second crust, sealing edges.
  11. Cut slits in the top crust for steam to escape.
  12. Bake for 30-35 minutes or until golden brown.

  • Let cool before serving.
  • Can be made ahead and frozen.
