Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons curry powder
  • 1/4 cup raisins
  • 1/4 cup chopped celery
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • 4 slices of bread
  • Leafy greens for garnish

Instructions

  1. In a bowl, mix shredded chicken with mayonnaise and curry powder.
  2. Add raisins, celery, lemon juice, salt, and pepper. Stir well.
  3. Toast the bread slices lightly.
  4. Spread the coronation chicken mixture evenly on two slices of bread.
  5. Top with leafy greens and cover with the remaining slices.
  6. Cut the sandwiches in half and serve.

Notes

  • Adjust the curry powder to taste.
  • Can be served with a side of salad.
