Ingredients

- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 2 tablespoons curry powder
- 1/4 cup raisins
- 1/4 cup chopped celery
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper to taste
- 4 slices of bread
- Leafy greens for garnish
Instructions
- In a bowl, mix shredded chicken with mayonnaise and curry powder.
- Add raisins, celery, lemon juice, salt, and pepper. Stir well.
- Toast the bread slices lightly.
- Spread the coronation chicken mixture evenly on two slices of bread.
- Top with leafy greens and cover with the remaining slices.
- Cut the sandwiches in half and serve.
Notes
- Adjust the curry powder to taste.
- Can be served with a side of salad.
- Best enjoyed fresh but can be refrigerated for a day.
