Ingredients

- 4 cod fillets
- 2 cups fresh spinach
- 1/2 cup sun dried tomatoes, chopped
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add cod fillets and cook for 4-5 minutes on each side.
- Remove cod and set aside.
- In the same skillet, add sun dried tomatoes and spinach.
- Cook until spinach is wilted.
- Stir in heavy cream and Italian seasoning.
- Return cod to the skillet and simmer for 5 minutes.
- Season with salt and pepper.
- Serve hot.
