- 2 cups cooked white beans
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 cups spinach
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in the white beans and cook for a few minutes.
- Add vegetable broth and thyme, bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add coconut milk and spinach, stir until heated through.
- Season with salt and pepper.
- Serve hot.
